Pudina Cholle Recipe
1 cup chickpeas / cholle / kabulli chana
1 cup chopped Spinach leaves
1 cup chopped mint leaves
3 green chillies / paste
1 tsp ginger paste
2 medium onions finely chopped
1 tomato finely chopped
1 ½ tbsp Cholle masala
½ tbsp Garam masala
1 tbsp amchur powder/dry mango powder
1 bay leaf
1 small cinnamon stick
1 tsp jeera/cumin seeds
3 tbsp oil.
Soak the chickpeas overnight or at least for 4 hours in hot water and pressure cook with salt & water until soft.
Blanch the spinach leaves and makes paste along with pudina leaves and green chillies.
In a pan, take the oil. add bay leaf, cinnamon stick & let Jeera crackle. Add onions and ginger paste and cook until onions turn translucent. Then add tomatoes and cook until they turn mushy. Now, put in the garam masala, chole masala and amchur powder and cook until oil separates. Pour the green paste,salt and add cooked chole, pour a cup of water and let simmer for 15 mins.
Your Pudina Cholle is ready! Serve with Kulche or Puris and relish every bite.
Pudina Cholle is a wonderful twist to the regular Chole Masala. You can serve this to your guests and they will totally love it!
Some other delicious accompaniments to this dish would be : pickled onions, mango pickle & papad. A dash of lime would add to the zing for sure.
